Ingredients:
making vegetable pulao 1 cup Basmati rice, drained after 30 minutes of soaking in water
1 tablespoon ghee or oil
1 large onion (sliced)
1-inch piece of ginger (finely chopped)
3-4 garlic cloves (finely chopped)
1 green chili (slit lengthwise, adjust according to spice preference)
1/2 cup of mixed veggies, such as carrots, beans, and peas.

 1/4 cup chopped potatoes (optional)
1/2 teaspoon cumin seeds
4-5 whole black peppercorns
2-3 cloves
1-inch cinnamon stick
2-3 green cardamom pods
1 bay leaf
2 cups water
Salt to taste
Fresh coriander leaves for garnish

Instructions:
1. Heat ghee or oil in a large pot or pressure cooker over medium heat. Add cumin seeds, black peppercorns, cloves, cinnamon, cardamom pods, and bay leaf. To release their aroma, the spices should be sautéed for one minute.

2. Add sliced onions and sauté until they turn translucent. Add the minced ginger, garlic, and green chile after that. To get rid of the raw smell, cook for a few minutes.

3. Add the mixed vegetables and potatoes (if using) to the pot. Sauté for 3-4 minutes.

4. Now, add the soaked and drained Basmati rice to the pot. Gently stir to combine the rice with the vegetables and spices.

5. Pour 2 cups of water into the pot and season with salt according to your taste. Stir everything together.

6. If using a pressure cooker, close the lid and cook for 1 whistle on medium flame. If using a pot, cover it with a tight-fitting lid and cook on low heat until the rice is fully cooked and water is absorbed (about 15-20 minutes). When necessary, check occasionally and add more water.

7. Once the pulao is cooked, fluff the rice gently with a fork. Garnish with fresh coriander leaves.
